Summer is almost here! At least up north!
The rise in temperature and humidity demands a change in my feeding habits.
I have to put aside the hearty roasts and casseroles for something lighter.
I have to say that I’m excellent for cooking breakfast, snacks or desserts but healthy meals… I have a lot to learn!
Opening the fridge, I had to work with what I had, which was not much. Lettuce, an orange pepper, broccoli and some blackberries. The day before I made a salad with those ingredients with some olive oil as a dressing, it was awful.
I asked my roommate for advice, she a genius! And I set out to do the exact same salad, which seems really good in theory, the problem was the dressing…
We figured that a sweet dressing would work really well with the blackberries. She looked up a simple recipe on the internet and we adapted it!
Salad dressing :
some olive oil
a couple of drops of balsamic vinegar
a splash of maple syrup (or honey, but I’m a real fan of maple)
some fresh parsley and thyme
and I ended up adding some sesame seeds
It was delicious! Sweet and fresh, but filling. Just want I needed on a warm summer night.
I had the exact same thing for lunch the next day and enjoyed every bite of it!
